Does my meat come fresh or frozen?

once cut and packaged our meats are then flash frozen to ensure freshness. We then transport it back to the farm where it is kept at below zero in freezers, then it is packed in our insulated tote bags and delivered to you! We believe that this process gives you the freshest meat we can possibly give you!

What is the best way to defrost the meat?

There are a few ways to safely defrost our meats while still ensuring its freshness. If you need to defrost a peice of meat for dinner on the day you are cooking it, we reccomend placing your packaged meat in a cool water bath. this process can take anywhere from 20 minutes for a pound of ground to an hour for a thick cut steak. Another option when there is no time crunch is placing your meat in the fridge to defrost over a day or two.

**At no time do we ever recommend defrosting meat in a microwave- this process cooks the meat instead of thawing the meat, it also creates heat which can inhibit bacterial growth.

After I defrost my meat, How long can I keep it refrigerated?

If the vacuum sealed package is not broken, the shelf life is more than 2 weeks in your refrigerator. once the seal is broken we reccomend consuming ground meats within 3 days and thicker cuts and sausages within 5 days.

Frequently Asked Questions

Once a month you will receive a share of fresh quality meat raised on our farm. Your share for the month will have a variety of beef, pork, lamb and poultry cuts. The amount of each cut will depend on what was processed during that month. We try our best to include your typical everyday cuts as well as higher end cuts. We do offer lamb and pork free shares. A 10lb share will most likely include 1-2lbs of ground meat, a sausage, pork and lamb cut (such as chops or ribs), a beef steak, and chicken or turkey parts. Occasionally a roast or whole chicken will be included depending on the season and harvest schedule.
